Tabouleh


Ingredients:

1/2 cup bulgur, medium grade

1 bunch fresh curly parsley (chopped, stems discarded)

2 tablespoons of fresh mint, chopped

2 stalks green onions, finely chopped

3 medium tomatoes, diced (remove seeds)

1 English cucumber (no seeds)

6 tbsp. lemon juice (freshly squeezed)

½ cup extra virgin olive oil

Pinch of salt

Pinch of black pepper

Preparation:

1. Soak bulgur wheat for at least 2 hours in hot water until soft.

2. In a salad bowl add bulgur, parsley, cucumber, tomatoes, green onion.

3. Combine all ingredients.

4. Sprinkle olive oil, pour lemon juice, salt and pepper on top.

5. Chill in refrigerator for 1 hour.

6. Before serving add fresh mint.
